Mango Chia Seed Pudding 

Serves 2


Ingredients:

 

1 cup coconut cream (fat solids from coconut milk)

1/2 cup fresh mango, cubed into 1/2 inch cubes

1 tablespoon honey (optional)

3 tablespoons chia seeds


Directions:

In a bowl whisk together all ingredients until well mixed. Pour into two 4 ounce glass jar and cover with lid. Store in fridge overnight. Enjoy within 3 days!

What better way to greet the morning after new years than with this revitalizing breakfast smoothie?  Make your first morning of 2016 an affirmation of health with sweet mango and spicy turmeric.  This smoothie blends vitamins, acids, beta carotene, and anti-oxidants, which makes it the perfect pick me up after the holidays. Good Morning Smoothie/ Guest Post by the Kitchy Kitchen

For 2 12-ounce smoothies

2 cups almond or coconut milk
2 frozen bananas, peeled and chopped
1/4 cup orange juice
1 teaspoon ground turmeric
1/2 cup mango, chopped
1/2 cup carrot, chopped

For an extra cold smoothie, pour a cup of the almond coconut milk into an ice cube tray to make ice cubes.  This way, your smoothie will be ice cold, without watering it down.  Just add the ice cubes and a cup of almond coconut milk instead of 2 cups of almond coconut milk when you blend everything together.

Pop the ingredients in a blender, and go from mix to liquify in steps.  Let it blend on liquify (or the highest setting) for 30 seconds.  The trick to this smoothie is REALLY blending it.  Taste and add more almond/coconut milk if you like a thinner consistency.
